Right chef, what you making here? I'm
making my paneer curry. In India,
there's a 40% of people are vegetarian.
Paneer is the replacement of chicken,
mutton, lamb, our paneer spring. Now,
I'm adding ginger and garlic paste, two
spoonful of yogurt, salt, cumin powder,
again my homemade garam masala, kasori
mati, a pinch of turmeric, some black
pepper, lemon juice, and finally lemon
zest. I grated this. Just mix all this
slowly. Paneer is marinated. I'm keeping
this on rest for 30 minutes. If you are
running short of the time, no need to
rest. You can cook directly. I'm using
ghee because in India cooking in the
homes are done by ghee only. I'm adding
cumin seeds just crackled. Whole spices,
cinnamon, black cardamom, green
cardamom, bay leaf, cloves. All spices
are cracker. I'm adding our marinated
paneer to this. The boil has come. This
time I'm adding green chili. It's all
optional. If you can't handle the spice,
coriander. Cover the lid. 3 to 4
minutes. Oh wow. This time fresh cream.
